Notes from Producer

Gently pressed for delicacy and fermented in casks and vats. Removed from the yeast lees after fermentation. A small addition of another Italian variety ‘Greco’ was added for complexity and texture.

Briny, gently aromatic with wild herbs and chamomile. Textural, slightly salty, gentle but assertive flavours.
