The grapes sourced for ā€˜O’ were handpicked at the break of dawn to retain freshness from the Piccadilly Valley, the coolest subregion within the Adelaide Hills. Vineyards are situated at altitudes between 450-600m resulting in the development of enhanced varietal flavours and elegant acid profile.

A blend of the classic Champagne varietals, Pinot Noir, Pinot Meunier and Chardonnay, this Méthode Champenoise style wine has been aged for two years on lees in bottle before disgorging.

Nose:Ā Complex with fresh green apple and citrus blossom, complemented by toasted almond and nougat.

Palate:Ā Fine beading adds to the creamy texture with a clean minerally finish.
